Looks great !!
As for the bread, that type of bread like Chaibata and Baguettes tend to be dry.
Take some Mayo next time and rub it into the moon craters and stick it in the broiler for a few minutes that will give new life to it.

Yeah, it was a chiabata bread that was supposed to have parm added also. I like chaibata so I'm used to it being dry. This was dry even for chiabata, and the parm flavor was a fib. I'll try the mayo and heat thing next time though. I've done that before with butter (who hasn't?), but it still doesn't get me quite the results I'd like with this kind of bread.
Mayo and BBQ sauce on the sammiches helped though, as did the high fat content in this brisket.
Good ideas from Rambo and OUP too.

Yeah, butter works a little but Mayo seems to not disappear when heating it and tends to hydrate more for some reason ?!
