Feeding my Habit

Decided to Charcoal a link of that Hebert's Pork Sausage, some Hot Wings and a couple of 4-J ABTs with some Sprouts for a side.
The Wiffy could not quit raving about how good the Link Sausage is. Used my Therma Pen for the second time and "man" is it Faaaassssssttttt :salut:

Sailor Mam, they are casings filled with the stuffing and they must be good casings because they eat very well right along with the stuffing - - - I'm thinking that sheep casings are the most sought after but not real sure :dont: good casings just snap when you bite thru them and not chewy at all :tup:

Before you cook these they appear to be too loosely stuffed but as you can see on the plated piece the casing shrinks down tight to the filling. :salut:

Hmm, my mad scientist lobe in my brain is pondering sumtin sumtin...

Me wonders if one could " Ripperize " one of those links with some beer soaked Kraut and that Whataburger Sauce ??
OR..
Maybe some Caramelized Onions and Spicy Brown Mustard ??

Sheep casings are preferred over pork, but not as readily available.

My friend owned a butcher shop,, he let me fill sausages in the skin, it's very hard to work the pressure control to stuff these.

Pocono, there will definitely be some kind of casing in a bun at lunch so thanks for the suggestions - - - maybe bacon wrapped to achieve the Ripping :dont:

Pardnah, you are sooooo right about holding pressure to "properly" stuff those casings - - - I might have done Venison sausage three times in my life before I switched to a processor for the sausage making :roll: :salut:

All this talking about that larapin leftover link had me chopping up a chunk of it and mixing it with egg, salsa, pepper jack and jalapeno jelly. Then, of course, it all went on a white corn Guerrero Tort and in the Nuker to melt the chez. When I first started chopping up the sausage, I thought it was gonna be to much charcoal flavor but I was pleasantly surprised :roll: :shock: It was Yummy :tup:
