the turkey halves experimental cook
I picked up an 11.6# turkey
I brineded it overnight, after it thawed out
then I cut it into halves
the purpose of the cook was to cook the halves direct over the charcoal- bone side down, in classic bbq roasting style
I put the two halves on pieces of foil to protect the exposed breast meat
I watched my temp gauge in the OS's lid and at 90'mins I added 1/3 chimney of more charcoal to keep the temp up in the high 300s
I used some cans on my plastic shelf to hold the grill while i poured in the new lit coals
I left the halves on for 2h20m - until the breasts were at 170° and the thighs were around 180°
when i took the halves off I ate the two wings - most excellent- great flavor
then I stripped all the meat off of the bones and bagged them
2 bags of white meat and one bag of dark meat
I'll use the dark meat in a gumbo soup
at the moment all of the bones are in the stock pot cooking down for stock
some of which will be added to the roux for the turkey gumbo soup
it was a great cook for a $10 turkey

Sir Yes Sir It's Turkey time and you got yours looking right. I'm going to try and get one on the smoker this weekend and i only hope it looks that good when I'm Done.

the idea was to cook a split half turkey like the big chicken bbq cooks for large social gatherings
as i've mentioned, i am not a fan of the spatchcock techique
i think it just makes it too much trouble to handle a strange shaped piece on the grill
i think that chicken cut in half makes a perfect sized piece to grill for a bbq roast
my idea was right, it's just that a split turkey is a big piece of meat to cook on a grill
if i ever did it again i would separate the dark meat leg sections from the breasts and cook it as 4 pieces
the other thing i didn't particularly like was having to lift off the grill to add more charcoal halfway through the cook
i'm spoiled.. i love our flip side hinged grill so we can add briquetes and wood chunks through the cook
i think if i was cooking a turkey on an 18" OldSmokey i would still leave the bird whole and lift it off with tongs to a tray when i needed to add charcoal.
the same if cooking a whole turkey on a 22"OS without the flip side grill.
i still recommend cooking the big bird 2-sided indirect with the flip side grill over the double foil pan technique
with or without a 'V' roasting rack (Y)

I agree with spatchcocked Turkey being a bit fussy to manage. And it's not much better on an OS smoker; still have to rotate to get some even cooking. I found that whole like yours here, works out well, with the legs facing the heat and breasts away since the legs are a bit more forgiving to higher temps.
