As to suggestions for a sous vide cooker, they all should work the same. Look for one that has the features you want. Wifi? Bluetooth? I have 3 Anova cookers. 2 of them are the originals and one is a Bluetooth version. Me, I don't use bluetooth at all, just set the temp and timer and it's off to the races.

I too am a fan of sous vide although I don't have a lot of experience at it (the warden is a real skeptic even though she has been very impressed with the results).
We have a couple different setups one is a Anova another is a crock pot slow cooker looking device that has a built in controller either works fine but the crock pot thing is more limited in size where the Anova is happy in the pot you choose.

With the gain in popularity the prices for devices have really come down in the past couple years.

In that span of temps, a longer time in the bath will pasteurize the meat

that is pretty much me, simple and go.
I work in a extreme tech "bluetooth and wifi" world, so when I get home I want the non "techno life". Cooking is my escape from the techno world and now here comes the complications in the one and only escape I used to have from work.
