JC.. I can tell you now that the dismal results were due to this brisket. Looking at the pics of your sliced flat, it appears there was not very much intramuscular fat at all. Virtually NO marbling.
Overall, the brisket looks great. Good color, decent smoke ring. You did well, sir, it was the cow that failed you!
