New years eve brisket

New years eve brisket
I decided to go ahead and get the show on the road. If it takes roughly 12 hours it should be done around 7 am. Then a 4 hour rest so it might be ready to eat around lunch time tomorrow.

Its been on for a little over an hour now with many more to go. I home basting it with the wickers mop is a good idea. I love it on pork and chicken but this is the first time I have tried it with beef. I will post some pics later on during the cook.

Sorry guys.... I put it in the oven at around 5 this morning. It cooked faster than anticipated. I got 2 hours cat nap and have been making the beans end rice to go with it. The beans are taking forever but the smell and taste wonderful. The rice is done now and I turned the oven onto warm to warm up the Brisket. Its still sealed tight in a foil pan with about 5 layers if tin foil over it. I hope to post pics of the carve within an hour. Happy new years everyone!!!!

I must have trimmed to much fat off. I didn't inject either. I overcooked it
