Thanks for the compliments. I thought I had black mold. It ended up being the stamping on the outer fat side section of the strip.

Just took it another level... dedicated glass door refrigerator, amazon brought me the rest of the parts I need to really dry age. Now I have some work to do. I bought two fans, 3 thermometers, a blue tooth temp and humidity probes with digital readouts and warning alerts and an UV light to control unwanted molds and smells. Pics to follow when I’m done messing with it.
