Blackened Filet of Red and some Corn-a-Kopia

Blackened Filet of Red and some Corn-a-Kopia
Even tho I over thought this Lunch, I should have thought more about the sides and how they were to be cooked.
Oh Well, I needed the exercise anyhow and was pleased with everything. The Wiffy even ate all of her Burger Slider and bragged on it.
Grilling 2 ears, toasting slider buns, grilling burger pattie and heating the griddle up.
7 minute nuke on the ears and then some grill time for color/taste
Slider pattie and some pineapple rings sprinkled (on one side) with Suckle Busters Hootchie Mama yum yum
Buttered and Blackened Seasoning and on the hot Griddle
Elote (Mexican Street Corn) removed from ears, added previously sauteed bacon and trinity, mayo, sour cream and butter.
This was my first time to try this but it sure won't be my last time. After tasting it, the Wiffy's words were "That's the best corn I've ever had - - - if you cook it again please don't Fix the Recipe "
Rice a Roni long grain and wild rice with seasonings. Even tho it was a boxed mix, I cooked it in the Rice Cooker with no problem
Creamed Horseradish and Catsup = Dipping Sauce/Cocktail Sauce
Glad I only sprikled one side with Hootchie Mama - - - both would have overpowered the pineapple taste too much.
Worth the effort for sure.

I think Y'all would enjoy the Elote, Joe.
I tweeked the Elote in a Cup Recipe AND lucked out with something delicious.
As for the Corn, I put the 2 ears in the Microwave and nuked for 7 min turning over 1/2 way through.
Then I grilled them just a little and removed the kernals from the cob.
I had previously chopped up some bacon, celery, green own-yawn and jalapeno (you could use any pepper) and sauteed them until the bacon was almost done.
Dumped that into the Corn and added approx one level tblsp of butter, mayo and sour cream.
Nuked it just enuff to make it easier to mix all of that together and "Bone Apple Tight"

thats a good lunch...
kinda funny, I taught the wife & daughter long ago at some seafood joint to mix the horseradish & catsup with a spritz of lemon & Tabasco for the red sauce.. so any time food is around needing that sauce they race to see who can fix it first, nether one will touch the red sauce in the store they insist on making it fresh just a humorous observation on my part...
