Saturday = steak day
Made a few sirloin steaks today. Oven baked potatoes with sour cream, broccoli, seasoned butter, chimichurri.
Seasoned the steaks with SB campfire and SPG.
Grilled the steaks about 2 min on each side and then a couple of minutes on indirect heat. Ended up the way I like them.
Only made chimichurri once before but this will be our go to sauce if we don't make creamed sauce in some variant.
There are probably a lot of different ways to make chimichurri. Here is our version:
1/2 cup olive oil
1/3 cup white vinegar
1 cup chopped fresh flat parsley
1 cup chopped cilantro leaves
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
3 cloves minced garlic
2 dried chiles de arbol (I didn't have this so used 2 tablespoons of sambal oelek which is minced chili)
Mix everything in a blender or mixer.
Had a nice Italian Amarone red wine which was great with the steak.
There was about 1.5 meter of snow on the roof over the terrace. With rain since yesterday that snow was getting heavy. It's about 450 kg per sq meter. With about 35 sq meter that's over 15 tons. Haven't built the glass roof to withstand much more than that so had to shovel it of. It's snowing again now.
Will take the couch for the rest of the evening.

Those look good; for the life of me I can't grill a Sirloin tender; I just put'em in a cast iron skillet with gravy mix and throw'em in the oven.

Strange. I don't do anything particular. Just grilling them 2 minutes on each side with high heat, then a couple of minutes on indirect heat. Turns out great.
Have you tried to tenderize them with kiwi? I have never done it. but I've read that you can lay out a layer of kiwi slices, put the steaks on top and another layer of kiwi slices on top of that and let rest for a few hours. That should tenderize the steaks.
We usually buy steaks that are long term tenderized.

That looks great! I've tried to do a chimichurri with lamb chops before with mixed results. Never tried it on steak though.

It's 1/3 cup. I'll correct the recipe. Thanks for letting me know.
This chimichurri has pretty intense taste and might be a bit too much for lamb chops imho. Would be nice with a leg of lamb I think.
Let me know if you try the recipe. By the way, I used white vine vinegar, which was fine.
