Smoking A Beef Round Roast

Postby woodenvisions » Tue Feb 26, 2019 9:06 pm

Well, this is a first for me so who knows what ill get on the back end.
Mustard rub before the actual rub.
245 with Peach and Hickory Chips. Been only 2.5 hrs and internal already at 135 so I pulled and wrapped it for 2 hours is the plan. Hopefully we don't have leather ??
Any suggestions on how to slice it would be very much appreciated since I'm clueless on this one. In thinking real thin like Roast Beef ??

I'll update the sliced pics in a bit.

Rambo,
Surprisingly it turned out pretty good, I'm thinking ill let the rest of the chunk stay wrapped up til tomorrow before I try to slice it all up very thinly. Made a few test slices about 1/8" and that's just too thick.
Wasn't chewy one bit but reminded me of a London Broil type of cook.

Beautifully done!! Layer some of this with some pickled red onion, stone ground spicy mustard, on some ciabatta and call it a day, sir!!

Rambo and Txd,
Thanks guys, I think once it sits wrapped for a day or two and sliced really thin we will love it. As for the Onions, Mustard and Ciabatta that's an excellent sammich idea.
Ciabatta and Sourdough are our favorite bread types. Thx for that idea, I'm ON IT !

If it tastes as good as it looked, Pal, then you have definitely "got a flocky" (as we used to say while playing marbles) :salut:
