YAMa LAMBa ding dong Lunch

First of all I really liked the taste, however, I'll get a larger cut next time, if possible? The sweetness of the Lamb and the loaded Yam (sweet Tater) really went well together along with the Rabbit Salad. I can't brag on Suckle Busters Campfire Steak Seasoning enuff when it comes to Grilling red meat. :bow:

went to the store a while a go, to pick out some briskets to put on hold for a church cook (a pilot coming back from the sand box) your posts had me eyeing the lamb I did see a leg there, thought it looked kind of puny ? the lamb chops like mini T-bones looked ok guess next order will have to order some campfire seasoning... :whiteflag:

Think of lamb like veal. Lambs are 11 months of age and younger. Prime age is 6-7. So, they're little fellas. Mutton is the sheep, 12 months and over if I remember correct.

Yup, and emms are called loin chops here, my wife's fave part of the lamb. I'm having a cold lamb sammich for my lunch. Glad to see you trying something different emm. Look good too.

I've also heard them called "lamb lollipops." Whatever you call 'em, I can eat plenty. Good looking meal!

Great plate , Emm.. Lamb chops is very nice. Leg of lamb or rack of lamb are great for bigger pieces. Here is an excellent sauce with lamb:

6 cloves of garlic, chopped
2 tbl spoons of oil
1 stilk of fresh rosemary
2 tbl spoons of balsamico acid
1.7 cups of redwine
2 tbl spoons of stonegrinded mustard
1 tbl. Spoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
0.4 cup of broth or juices from the meat

Fry the garlic in a pan with som oil until blanch. Add rosemary and redwine, simmer until reduced to half.

Whisk in mustard and sugar. Careful with the mustard, add little and little until taste is great.
Simmer until it thickens a little.

Eventually adjust thickness with com flour.

Add salt and pepper.

This sauce is fast to make and it's perfect to lamb.

Funny how the region you grow up in relates to food. I've never had lamb and my initial thought was yuk, but only because I'm not accustomed to it.

We eat a lot of lamb and some mutton. I'm not so fan of mutton. The fat doesn't taste good.

Emm, you have a lot of bigger parts to choose from.

The best parts imo is the leg, rack, filets and shanks. One of the biggest delicacies heres is the sheeps head. Called smalahove. Its salted and smoked. I don't eat it.Image
