I had about 8oz of leftover ribeye steak so I cubed it into some hash browns with onion, green and red bell peppers, s&p, and some tarragon.
Topped with 2 fried eggs (hit the yolks with tobasco, and some green onion.
Next time I need plan better and have a Bloody Mary ready to go.
