Prime rib roast on the rotisserie

Postby rexster314 » Mon Apr 01, 2019 10:10 am

Last night's meal, 4 lb roast done on the KA rotisserie. I mistimed the cook time, it got to 120 in 1 1/2 hours, so I turned the roti burner off, and turned on an end burner to keep things warm, but left the roti turning so the juices wouldn't just run out. Hour or so later the roti burner got turned back on and I finished the meat off till 134 deg. I think this will be my preferred way of cooking from now on. The hour resting let the juices assimilate back in, and finished meat was almost fork tender. Cook's Illustrated Au Gratin potatoes and rolls finished the plate.

Perfection! :salut:

I cook a lot of roti chickens. It might be time for me to step up to a roti rib roast.
