Wild Hog Medallions

Postby tex_toby » Tue Apr 09, 2019 6:30 am

My neighbor hooked me up with a fresh wild hog tenderloin, so I knew just what I wanted to do - medallions! Cut into pieces, wrapped in bacon and seasoned with Hog Waller. Winner winner, wild pork dinner!

Ah yes, Pork wrapped in Pork equals

I've done similar with Bambi Backstrap but I'll bet the Hawg was more juicy and tender

At first when I read the title, the movie was what came to my mind.

Then I saw your food. It's looking great. I got so inspired that I stopped on the way home and bought ingredients to make the same. Thanks for coming up with a dinner idea for me. IImage

Too late. We already ate it. Was so hungry after a long day at work so didn't think of pictures. But it tasted great. I had some coleslaw, cheddar dip and rice as sides.

I've cooked a lot of wild hog and I can tell you it is more similar than different compared to store bought. I've cooked a wild hog butt next to a store bought butt and nobody could tell the difference.
