That Sirloin looks perfect and I wholeheartedly agree about that Bearnaise Sauce, its one of my favorites to cook and pair with a good Sirloin or Filet Mig !!
Its definitely not one of those sauces that you make " during commercial breaks "
It definitely needs ones FULL attention because like you said, it will ruin quickly !
