Picked up a 1/2 lb Bison Sirloin the other day and ended up making Fajita instead of Grilling it like a steak. The Wiffy had me thaw a Bird Breast at the last minute and it became "His'n and Her'n" Fajitas today with great success and taste enjoyed
As good as that Buffalo tasted, I'm thinking I need to grill me a rare one with a Sweet Tater and soon.
HEB Spicey Charro Beans with two slices of HEB jalapeno Bacon added.
Wiffy made her own with a flour tort and there's just so much the Camera can do.

I thought for a second the orange stuff was carrots and decided to abstain from commenting. Luckily a closer look revealed it wasn't.
Have never tasted buffalo meat. What does it taste like,

Booff A Low is supposed to be low cholesterol healthy protein. I have seen them in the flesh; much prefer a large fence in between the two of us, they be fierce and irritable beasts, arrrggg.

Good stuff parts, the heat moved in on a us a week or 2 early. Time to move most of the cooking outside for me.

Thanks Gents, I can't wait to grill me a Buffalo Steak now.
We lived in Buffalo, Texas before moving here and there was a decent size herd down the road from us. He also furnished the Mascot for the School - - - of course they were handled a lot especially when young so became gentle like most any cow. However, the ones in Yeller Stone don't like to be petted.
This was a Sirloin cut and was very tender and tasted a lot like very lean good beef.

There are Texas Farm Raised Bison being sold in prominent stores as we type, Pardnah. I personally think that, if properly regulated, it willl soon be much in demand.

Both of 'em look great!
I remember as a very little kid, seeing a buffalo/bison at a zoo. It was big and it smelled, but nowhere near as dangerous as the llama.

Thanks Mam, back in the "daze" when I was a Farrier (Horseshoer) one of my clients bought a Llama and had me trim his/her feet once. They could really kick but I hobbled him before trimming HOWEVER, I couldn't "hobble" their spitter and he/her could unload a blinding mouth full, if you didn't watch out.
BTW, I picked up another Bison Steak that I'll be grilling with a baked tater and I'm really looking forward to it.
