Ostrich and Asparaguslasagne

Two day before we visited an Ostrich Farm.
I bought one egg and also 2 Filet and 2 Steaks.
For the beginning i prepared the Filets one hour Sous vide at 56 degrees Celsius and roasted them afterwards each side with my 800 degrees top heat Grill.

The ostrich was excellent and I´m happy that I have some stuff left in the fridge.

That´s very easy:
Just blanch the asparagus about 5 min. Make a Bechamel Sauce with Onions, and as liquid a mix of chicken stock and cream.
Then do just as with a normal Lasagne. First some Bechamel, then a layer of Lasagne noodles, then one layer of asparagus, Bechamel, some Cheese, noodles, asparagus, Bechamel and Cheese
Then put it into the ofen with 200 degrees Celsius for 30 Minutes.
