Camping and grilling

Just got back from vacation. The family and I spent Fathers Day and the following week in a Yurt at Lake Catherine State Park just outside of Hot Springs Arkansas. Hiking, fishing and hanging out. Had a lovely time and got really lucky with the temps and weather. It was mainly in the 80’s and 60’s for lows until the last day when they hit the 90’s. Back home it is face of the sun hot. Not to mention the kids survived a week with limited to no cell and internet. We had one rain storm and played uno for two straight hours plus multiple games of ladder or redneck golf! So much fun.

Now for some of the cooking and eating. We only took two seasonings, Sucklebusters SPG and Meat Church’s Season All. They were all we needed. I was particularly proud of the SPG seasoned flat iron steak. I just found it on sale at Kroger in town and winged it. Tasted great, cooked a little more than I like but I wanted the wife to eat it too. Very tender and beefy flavor.

Stopped at McClard’s BBQ Hot Springs. We went in cautiously optimistic (warning everybody not to order brisket) and came out pleasantly surprised. The pile of cheese you see is what they call the Whole Tamale Spread. It’s two tamales topped with chopped beef, beans, Fritos, cheese and it’s pretty fantastic. The rib and fry is five spare ribs with a mountain of French fries. I really liked the ribs. Cooked just right with a sweet / tangy vinegar sauce. Had a little hint of spice to it. Sausage was good as well.

Thank you Parts. No relapse. As a matter of fact while we were on a two mile hike to the water fall up and down the mountain terrain my wife mentioned that just before we left town she had seen a Facebook memory from Disneyworld one year ago when she had to push me in a wheel chair. What a difference a year, the Good Lord and excellent doctors make. I am a little sore but that’s mainly from just being off my normal back exercise routine and sleeping on the bunk beds in the yurt. I’ll have that ironed out in a couple days.

Some great photos sooner. That red hat in a few of them is a little dodgy. Looks like a great trip.

From my experience most people in that region have some sort of complex towards Texans and OU fans. So to oblige them I alternated my Rangers and OU hat throughout the week

Thanks all. It was a great trip. It was all things summer in one week.
