Got the urge for some Mahi Mahi so I picked up a very long filet and I cut it into several steaks, two of which I'm gonna grill today. I originally was gonna do them Blackened Style but last night I decided to give them an overnight marinade in some butter and Spicy Jerk Seasoning. Picked up what Egghead calls "the Personal Pineapple" which will be sliced and get some charcoal time PLUS some squashes/etc on a stick and some sweet peppers that have laid in olive oil all night. Somewhere in all of this I have plans for some Hootchie Mama to be sprinkled on something that is gaining Char.
Heck I might even dig out my old Bob Marley CD and crank it up while grilling

Mahi mahi sounds so much more elegant than dolphinfish or dorado. It is one of my favorite fish, grilled with lemon garlic butter.

I agree and they aren't the prettiest swimmer in the Gulf either. I learned to like it from my Granny who would always order grilled Mahi Mahi when I took her out to eat and it was always at Red Lobster (however, this was back in the days when they served good seafood)
Mini Story: she dearly loved fish and when we would vacation to Colorado we always fished a lot. She always fried the trout in butter and I've seen her eating "cold" trout for Breakfast after we had eaten a regular breakfast and were headed out the door to fish. Miss Ya Granny

I was a little skeptic about this one but it turned out very tasty. However, since I have plenty of the Mahi Mahi left, the next batch will be a la Oakie Sawbones or Blackened. The Pineapple was awesome but that Jerk Sauce got a little hard to handle towards the last few bites.
My intention on this Lunch was that everything would turn out to be "finger food style" and I got that accomplished with no problem. Just a few dishes to wash PLUS my hands

Yeah, I should have listened to that little voice (Old Bay) in my head while I was mixing the Jerk Marinade last night.
