Over the weekend we had fajitas with the outlaws. And, believe it or not, the MIL came out and asked me if I was taking pics. They're so used to it now, they make sure I don't skip that step.
First, for veg, I did a roasted onion and green peppers. The onion was roasted whole on the grill until tender, then the outer layers were discarded, leaving soft onion goodness. The peppers were sliced into strips and cooked in foil until tender. Sorry for the lack of finished pics, but the MIL took the pic of the bowl. Cool pic, but it doesn't exactly show much detail, does it?
Another side was mushrooms for the MIL and me. These were marinated in Texas Heat Chipotle pepper sauce for about 20 minutes, then sauted. They came out a bit spicier than I expected, but *wow* were they good.
And where would we be without the meat? Flank steak marinated in olive oil, vinegar, oregano, garlic, and S&P. (recipe in the recipe section) Very tasty! As for the tortillas, they were heated in foil on the grill. frequent flips to avoid burning and they were ready.
Other adds were a little sour cream, lettuce, tomato, cheese, and salsa. Sorry there aren't any plated pics, but I had folks ready for dinner. They demolished the meat as soon as I sliced it! As it was I had grumblings about the pics on the cutting board.
