Picanha trompo

Postby strength_and_pow » Tue Aug 18, 2020 6:10 pm

Found Picanha at Costco Business center. Choice. 4 pieces to the cryovac bag.
Seasoned one with fresh garlic and SB-SPG rub. Other got 2 Gringos Special Rub. Stacked them on my home built vertical skewer and onto the ceramic indirect at 350* with a pair of hasselback potatoes. An hourish got me to 135* in the big chunk. My guest prefers medium well which is where the smaller chunks ended up. 10 minute rest and deliciousness ensued. Did a cinnamon roll apple tart for dessert.

Oh wow. That looks fantastic. Never cooked it but I had it at a Brazilian steakhouse. Really good

There's a Grocery Store here that semi-caters to Hispanic Foods and the Meat Mkt has Picanha marinated and also plain cuts. I used to buy it regularly but lately I haven't been by there so it's going on my list. Thanks for the memory jog
