3 sourced beef Sunday dinner

Well had been procrastinating cooking a few things I didn’t want to freeze so Friday I figure might as well make it count so stopped by my favorite place selection wise for Wagyu products... Specifically I’ve been into getting wagyu split sirloin fajitas and wagyu tri tip...

So have been wet aging a brisket flat and a 3 bone beef rack..

Source 1: Black Angus Brisket Flat from Sam’s club

Source 2: Choice 3 Bone Beef Rack from Costco

Source 3: Wagyu Tri Tip from H-E-B

Been a bit leery of using a flat from Sams and Costco beef ribs(they used to carry prime but I think late last year they went all choice) on top of the grade the Costco ribs hadn’t been the best looking. Let it ride for both. Both of these finally passed the good enough criteria for me to buy, now how would they do once cooked??

I guess the tri tip would be the saving grace if the other 2 wouldn’t hold their own.

My non vegetarian kid’s plate sampler.

Flat, tri tip and beef rib. Kid’s preference was the flat...

A lot of leftovers especially with the older kid deciding 2 weeks back to try a vegetarian lifestyle.

Both my daughters, wife and myself enjoyed Sunday night dinner. No judgment from either the meat eaters or the newly minted vegetarian.

Thanks. I’m always of the thought if I’m going to light up the smoker I’m making it count... was tempted to put in a chicken since the Kamado still had plenty of life in it.. but figure fridge space is tight and will be after turkey and brisket Thanksgiving..
