I was always curious about these, so we finally got some. What would they taste like? Too smoky? Weird?
Nope, not at all. Just a little hammy, and quite edible. Only complaint, while both came from a pig equivalen of 'T-Bone' cut, one was an inch and a half thick; the other about as thick as three playing cards.
This is the fat one. The skinny one had better grill marks, but... Served with collards, and creamed carrots.

Yes Indeedie, Sailor Mam -- - that plate would be welcome on most every Texan's plate with that Pig Chop and Collards - - - how do you do the Creamed Carrots, if I make ask ????

Sometimes I make a white sauce... this time I got lazy, cooked the carrots till almost done, then threw in a can of cream of celery soup, parsley, and seasonings.

It was pretty good for packaged, pre-smoked meat, especially after we discovered that we bought it past the "sell by" date.

That plate would be welcome on a Norwegian table, too. Smoked pork chops are eaten a lot during the summer. Actually we call them "summer chops".
