We had done these Baby Backs on the gas grill (just to see what would happen)
What happened was, the fat never fully rendered. Taste was all right, but texture greezy/too chewy.
We ate some, vac-packed the rest. Out they came today, into a stovetop pot, with ketchup, hot sauce, soy sauce, and balsamic vinegar. Low heat. Maybe twenty minutes. All the fat rendered, and the fix worked. They were goood!
PS: Experiment concluded: No more gas grill ribs.
