Tried something new...Bacon Wrapped Pickles

Postby Scott P » Wed Apr 10, 2024 4:56 pm

Scrolling through shorts/reels/videos on my phone sometimes results in something good. I saw a short video on Instagram with the Pioneer Woman making bacon wrapped pickle slices in her air fryer. I figured that they would turn out really nicely on the grill too. They are stupid simple to make too. Simply place a pickle on a half slice of bacon. You can add a fresh or pickled or fresh jalapeno slice too if you want. Sprinkle on the rub of your choice, then fold the bacon over. I secured it with a toothpick run through the jalapeno and ends of the bacon. I tossed on more rub. They grilled over indirect heat on my kettle for maybe 15-20 minutes. I finished them with some Sucklebusters Honey BBQ Glaze.

They turned out to be quite tasty. They are easy to make, easy to eat and were popular among everyone that has tried them. I prefer the ones with jalapeno in them. A thicker pickle slice works well, but the Del Dixie Hamburger Dills just taste great with them You do have to watch the salt though as the wrong rub does get them tasting salty.

Did those a couple years ago. You can cut some salt factor with uncured bacon. You might try bacon wrapped pearl onions. A little tedious to peel but worth the effort. Then there’s also bacon wrapped garlic. Need to find heads with larger cloves, but also tasty if roasted garlic is your thing. I’ve also done fresh jalapeños bacon wrapped, they go over well with the right crowd. Guess bacon makes everything better!

I’m not a huge fan of pickles, I could probably get a couple of those in me.
