Ok,so I have a draw full of meat & instanst meat thermometers,none seem to work.Most have a nut on the back.I thought this is what you turn,to adjust them.Most of the nuts won't turn.I have the same problem,with new ones.Use them one time & forget about it.

Some thermometers have the nut behind the dial for adjustment some don't. Have you checked them in boiling water/ice slurry for accuracy to make sure them are no good?
Since your talking meat/instant read thermometerss here I would suggest that you invest (as in these things ain't cheap) in a Thermapen. These things (at least the two I have) are super accurate and read very fast...

I would do the boiling water/ice slurry test like James said to check them.
I also agree with getting a Thermapen. Well worth the money.
