Ok everyone, I know it's not quite the weekend but it's a HOLIDAY weekend! The 4th of July is TOMORROW and we wanna know what you got planned for the Smoker, Grill, Oven, whatever! What's on YOUR menu this holiday?!?!

I'm gunna fill that UDS up. I'll get it started about 9 tonight so it can cook over night. I'm gunna put a 13 lb brisket, 2 big wild hog hams and a goat ham on it. I could do without the brisket but my sis won't eat anything that didn't come from a store(she's weird). One of the hog hams are for us. I'll try to remember to take pics.

Taking one of the offsets up to Denton, Tx to cook for a buddies birthday party/family reunion. Will head up tomorrow and setup, then drinking and Texas Hold'em on Friday night before firing up the pit and throwing on a few briskets and pork butts. Saturday we will finish with ribs, sausage, turkey legs and fatties.

Don't have to worry about side dished this time... my kinda cook!

Going to try some blackened tilapia tonight.
Friday will put on a choice packer I found on sale, probably hot n fast, and the rest of the weekend is up in the air.

I've been at Papa John's Pizza,for 7 yrs.Other then my one day off & getting sick a few times,nevered took time off.So i'm off for next 4 days.Smoking & then grilling burgers,grilling hot dogs,I talian sausage,chicken quaters,,,turkey breasts,7 whatever else I can find lol.Sat nite,smoking a brisket & a ham.

I'm sticking to my story about cooking a brisket. If anybody say I dont they need proof...and if they can prove it swear I had a very good reason for not doing it. This is a real no brainer for guv'ment employees.

I have a roast in the smoke now. Spares, wings, abt's later. Had a guy tell me smoked cabbage was good stuff, so I'm going to try a bacon wrapped, butter soaked head.
