Quick Pork Chops

Last night was a "punt" night. Originally we were planning on going out, but the baby went to sleep late. Cupboards were almost bare, but we had enough for a simple meal.

First, the fire, this time with apple chunks (ran out of pecan after last week). I started smaller this time, which meant I had a smaller bed of coals to work with. On the plus side, I knew to start the cook shortly after the flames subsided, so it worked out. All-wood cooks are gonna take a *lot* of practice. The coals burn down faster than lump, so timing's more important than ever.

And the chops. They were about 3/4-1" thick, cheaper cuts from a "free week of food" I won some time ago. The chops were thawed in the sink in cool water, then given a light coating of oil and D-Dog's Apple Rub. It's easily the kids' favorite rub, so it was the go-to for tonight.

They cooked slower than I expected, but I think they were still cool in the middle, and the thickest one didn't cook completely through. The rub, oil, and juices combined into almost a glaze. Very nice!

And plated. Sides were wild rice and mac-n-cheese. Kids gave it :tup: :tup: .

But that would've ruined the aesthetics of that pic. :wink:

Yeah, probably shoulda. But I could just see my kids gnawing on bones at a friend's house. I'm leaving the bad example items, like belching, to the wife. She does it so much better than I do. :wink: :lol:

I could almost live on wild rice, the perfect side for pork chops. And those chops were very deserving of the wild rice. :D

Another great meal Rob... I like grilled pork chops served with a "salsa" of chunked fresh tomatoes, sliced sweet onions and salt to taste.
