Citrus Chops

I asked my wife to pick up some 1.5"-2" pork chops, which I was planning on half smoking with apple wood and then finish with a quick sear. Well she brought home a pack of quick fry bone in loin chops, so I made do with what I had and bit my bottom lip........

So I doused the chops with some Zesty Italian dressing and then gave a good dose of Wolfe Rub Citrus and did the same with an over ripe yellow squash out of the garden. The flavor from the chops was incredible and I couldn't chew enough of the bone! I'm embarrassed to say but I chewed on my daughters and my wifes leftover bones. :o

I've still got to try the bottle of citrus 've got. Thinking about using it on a roasted chicken tonight... Dang it, now ya got me all hungry!

Dang looks good. Eyetalian dressing and pigs go together like a horse and carriage. I also wouldnt worry about gnawing on the coomoonity bones. My Grandaddy knew that trick back in the real early 50's. It was a ritual after you got done with your pork chop or whutever it was you was eating which contained a bone..you passed it down to Grandad to be propaly gnawed. He also like to take leftover toast from breakfast and tear it into pieces in a big bowl..then cover it with milk and sugar and start eating with his Tablespoon. He also eat oatmeal and stoup and stuff like that with a T. Spoon. Teasspoons was too small. Now he did use a Teaspoon to stir his coffee. You ever do the toast deal? He claimed it was real good. I did not have an iron gut back in them days..so I never tried it. Figger it woulda made me puke. Just guessing of course. I was just a young whuppersnapper back in them days.

Hey Larry... I know that meal HAD to taste fantastic. Italian style dressing makes a great marinade for pork, have also used it on mahimahi and tuna. Thanks for sharin...
