Offset pit using hickory... first time out using SuckleBusters SPG (on a brisket anyway) - I can tell you it won't be the last. Pretty standard cooking times - 5.5 hours in smoke at +/- 250*

I was surprised at the depth of the smoke ring on the end piece. BTW, it was GOOOOOOOD. :chef:

That there is some tasty looking brisket, and I don't really give to much thought smoke rings persoanlly, more interested in flavor - but you sure do have a nice smoke ring on that brisket.

Thanks for the kind words.... As mentioned I was surprised myself. Now that I have a freezer full of brisket I'll have to come up with another idea - just wish it was a little warmer out this weekend.
