Stuffed Bell Peppers

Hope this is were I should put this recipe.

This is a recipe I have done in oven only , have yet to try on grill . Maybe someone might want to try it .


Ingredients:




I use green , red , and yellow bell peppers for color .

diced onion .

1 or 2 cans of diced tomatoes and green chiles

Ground beef , a touch of jimmy dean sausage for flavor.

Salt and groung pepper to taste .

Spannish rice .

Favorite picante sauce

Cook the rice according to directions , in a skillet partially cook beef and sausage with onion ,salt and pepper to taste .
Cut off top of peppers and save , get seeds and viens removed . Mix rice , beef , tomatos and green chiles , and picante sauce , make it a thick consistency . Place mixture into each pepper and place pepper top back over peppers . I use a giant muffin baking pan wife has to hold them upright . Place in oven and cook til peppers are soft . Would like to see someone try this on there rig , my grill went to the great bbq in the sky , 2 weeks ago , and my UDS is not yet finnished . Hope ya like this one .


I dont use amounts for this recipe as I do it by eyeballing everything .

Smoked stuffed bell peppers are a thing to behold I usually put some diced jalapeños in the mix for a little surprise or some cubed up Pepperjack.

Stuffed peppers and stuffed tomatoes done in the smoker are great eats. 8)
