Neked fatty is good - like em for breakfast. Favorite rub and smoke is all you need.
But I also stuff em. You can go in any direction you like. I like a little cheese and then some other stuff.
This one had blueberries, jalapenos, cheese and Hoochie Mama inside and out
Pork sausage removed from casing and stuffed with spinach, cheese, crawfish, onions, and pepper (I know - I'm a sick person )

ok, questions for one that has never done a fatty but really really wants to try
do you put eggs or something in the ground beef to help hold it together? if so, how much?
how are yall cooking them?
pictures look to be right over the charcoal, but how hot, and how long

Don't need egg to hold it together.
If you stuff, tighten it up by using clear wrap and twist the ends real tight. Kind of like a tootsie roll.

Egghead and KAM, we just gotta do a home and away thing sometime, this fatty "madness" is driving me nuts. Say surf and turf at my place and a fatty roast down south.

Fatty talk got me off my unaggressive behind - when working offshore while going to college my nickname was the Crisco Kid, short for lard .
Used this stuff - Jimmy Dean maple is real good without stuffing BTW
Mixed it all together instead of stuffing - pushed the cheese on the surface inside
Tightened up with clear wrap. Rub and smoke in the morning

Pretty spicy - maybe should have used one pepper. Naw, I like it spicy

tried my hand at one this weekend
I got a little excited to try it and didnt get any after pics
may have to try one with ground beef instead of the sausage. Wife thought it was too "sausagy"
