Hot Dish, with a low carb option

Postby DATsBBQ » Sat Sep 29, 2007 11:14 pm

Made this last night (Low Carb version but it would have fooled Mario).

You'll need:
6 Oz shredded Mozzarella Cheese
6 Oz sliced Provolone Cheese, cut into strips
8 Oz Ricotta
4 cups marina sauce*
1.5# Ground Chuck
8 Oz Ziti* (one half box)

9X12X2 Oven safe baking dish.

Prepare pasta according to package directions, drain and set aside.
Brown burger, drain grease and set aside.

Preheat oven to 350 degrees.
Layer baking dish with Ziti
Add 1/2 of the Mozzarella
Add 1/2 of the Provolone
tail 1/2 of the Ricotta
Add 1/2 of the Ground Beef
Spread 1/2 of the Marina sauce

Repeat for second layer

Cover with foil and bake at 350 for 45 minutes. Uncover and bake another 15 minutes or until bubbly

LOW CARB option
Use Dream Fields Ziti (5 net carbs per serving vs 40+ for regular) & home made marina, recipe follows. Makes 8 servings, each serving less than 17 carbs!

Low Carb marinara Sauce
1 28 oz can diced tomatoes
1.5 TB tomato paste
Italian seasonings ( Oregano, Basil, Garlic) to your taste. I don't measure on this, just use the rule to add to you can see it in the sauce.
Wine or water
1/4 cup Parmesan Cheese

Combine all ingredients and simmer for 3 to 4 hours until tomatoes break down to mush. Stir often, add liquid (water or wine) as needed to keep from making a paste. Season as needed.
