I think my Granny used to make Navajo flatbread all the time. Everybody always called them hoe cakes. I guess that's where the name came from. Just shortened Navajo. Never made the connection until now. At least they look the same when I googled pics of Navajo flatbread.

Giggle the recipe, make 1 to 2 days before needed. Muffin tins are perfect, heat them up with about 1/2 teaspoon of fat or lard, when its smoking take tray out and put batter in to about 2/3 rds full and bake at moderate temp for 15 to 20 mins. They rise a lot and are so yummy you will be doing them again, nice thick rich gravy over the top, bingo.

Whenever my kids are talking to me about what we are having on a Sunday for dinner, if I say roast beef, the next sentence from both my kids is always, you'd better be doing Yorkshire puds,lol.
