44 Farms Beef Ribs

These ribs came from 44 Farms in Cameron, TX. These folks produce some very consistent, high quality beef, and these ribs were no exception.

I mixed up a standard salt and pepper rub. 2 parts pepper to 1 part salt, then added equal parts of paprika, brown sugar, and garlic powder.

Smoked these on my little Weber Smoker. No need to fire up the big pit today. I used oak lump charcoal and added chunks of oak throughout the cooking process.
These ran at 275-300 degrees for right about 6 hours. I did wrap with red butcher paper during the last hour and a half.

They turned out.

*Some of the pictures came in inverted...I will work on that for next time.

Those look good for sure! Wish 44 Farms had briskets available to the public. I'd buy a lot of my meat there if they did. I've tried twice and both times they've said they rarely have any for public sale.

They are becoming more and more available. We sell them at the market. And, if you call ahead, we can definitely get them. I will post my 44 Farms brisket cook next.

Those beef ribs look awesome, where in Cameron is the Market. Headed to Rockdale in a couple of weeks and need to stop by and pick some up. Great job on those ribs :salut:
