Tri Tip

Best Friends coming for the weekend, got a Tri Tip and Veggies on. Pics and info to come....

Anxious to see the Finals - - - I've only done one Tri-Tip and thanks to Capt'n Jack it was a success but I'm due for another one real soon :tup:

Did a couple of them yesterday. Injected with Butcher's Prime Injection. Smoked at 250 until they were about 130 degrees internal. Then went direct to reverse sear, maybe 3 min each side. Let them rest for 15 minutes.

I will preface this that I love medium rare everything. However my wife likes more medium, as well the guests I was cooking for, so yes it is over cooked, which was intentional.

It was a Santa Maria Rub in the package, my go to grill potatoes, carrots, and onions.

1 full can of lit coals, potatoes over the fire, Tri Tip indirect.

Started off a touch hotter than I wanted, but I wanted the spuds done around the same time as the Tri Tip.

I mopped/seared it at 133, grate probe got in the way and ended up on the table.

Mop sauce, red wine/ red wine vinegar 50/50, dijon mustard, parsley, and vegetable oil.
