9 Hour Beef Ribs

To rip off on what is arguably one of the most famous of Aggie quotes of all time:

“Sighted ribs, smoked same.”

Holy moly. There’s way more meat on those then when I’m seeing them up by me. Those looks delicious. Nice work.

That looks amazing. Now I'm craving for a plate of ribs.
Kinda indulged myself a bit lately because I bought a set of touren wheels and toyo tires. Ready for more road trip.

Great looking bones, Boots! Here recently, our local Walmart has been stocking some beautiful, THICK, 4-bone chuck shorts. I gotta get on that!

Brother Pinoy is right. Salt and pepper or yer favorite brisket rub works. Emphasis on the low; like brisket they got a lot of fat you’ll want to render out, but a much more delicate texture so if you run high heat you’ll either abuse them or have a really short time window to stick the landing. One could quick sear then slow finish.
