When do you Prep your Briskets?
Okay so I normally Trim and Rub the night before and have been cooking hot and fast on my BIG smoker “La Sancha”
I have 2 briskets that I’m going to smoke tomorrow for a lunch party on Friday. I was going to go low and Slooow on this one, but I’m curious as to how you guys prep yours ? Should I Rub tonight like I always do or do it in the morning? Looking to put them on around 9AM

I always rub the night before. Ive tried 30 minutes prior and feel like the flavors dont penetrate as well.
My last went 17.5 hrs at 225. Thank heaven for pellet poopers!

I trim very close and take out the hard fat between the flat and the point; gives superior smoke rings. I apply Kosher Salt and course black pepper the night before the cook and wrap it as tight as I can in Saran Wrap. Works for me; 225-250 on the old stick burner until it’s ready: where’s your darn probe.

I’ve done both but really prefer the night before. I feel less rushed and tend to do a better job of trimming. I also feel like the rub has more time to settle in before cooking.

I rub mine in the morning, or prior to whenever I am going to cook it. Then go lite the fire and let the brisket set out and work towards room temp while I am waiting on the pit temp to come up. I do not do any trimming at all. Or very rarely, i'm sure it may add a little cook time to it. But when I am cooking a brisket that is all I have is time. My last cook I did an 1836 base, with a lite dusting of SPG. I was quite nice. Good luck on your cook, i'm sure your office will enjoy the treat.

For comps. I trim and inject and place in a pan,the evening before. Back in the cooler or iced cambro.I wake up at 2am, take the brisket out, start my fire, add rub, let my pit come to temp@275 and usually on by 3am. I do not let my brisket sit out to room temps. I like them to still have some chill to them, cooks a bit longer but they get more smoke and a great smoke ring. Doing a brisket at home, I prep right before starting fire, no injection, cut the deckle fat out, add rub and ready to go. Hope this helps ya out.
How bout some more beans Mr.Taggert? I'd say you've had enough!

250 on my WSM, usually 12 hour for a 14 lb. brisket. My brother BIG ED cooks 225 on his barrel pit.

Thanks, I’m cooking a 20lb and 18lb both are Choice and look well marbled. I’ve got time and that’s why I was going low and slow.

Limey, can you share what injection you use or is it home made? I have never injected in my life, I wouldn't have a clue how to go about it, and likely never will, but I am curious about it. I certainly would never inject for something to serve here at the house, or take to the office like 2guys is going to do.

I use Butchers original beef injection, I mix with distilled water and add a few other things to it. David (owner) just won the Jack Daniels cookoff and is a great BBQ ambassador. He has great videos on his website on how to properly mix and inject. butcherbbq.com If you have any questions feel free to PM me.
