All Done and sliced, brisket being delivered as I post this. Only change was the meat isn’t going to be put in roaster but warmed in the aluminum tray over Cambro burners.
Also made a tray of cheesie potatoes.

Yes Sir, actually mixed three cans of each soup, 1/2 of the tub of sour cream with 5 cups of cheese and bbq rub of your choice, I used about 1/4 cup of Rub.
You boil the potatoes first but not too much just to soften them a bit, then do a rough chop and mix all ingredients into the oven or on the smoker at 300 for about 20 minutes.
Look up “Bills Suprise Potatoes “ online for the original recipe.

Thats a great looking lunch package. My Mrs makes cheezy potato's, but she uses hash browns. And puts a crunchy topping on them, I think it is crushed potato chips on the top when she bakes it. That pan of yours looks really good.
