Carne Asada ñ Pickled Onion
1 c. cilantro leaves fresh packed
½ c. olive oil
¼ c. orange juice fresh
½ tsp. apple cider vinegar (optional *
4 garlic cloves chop
1 jalapeño fresh stemmed seeded chopped
2 Tbsps. lime juice fresh
1½ lbs. skirt or flank steak trimmed grill
16 ) 6" corn tortillas heated
1 c. salsa verde store bought or make
½ c. red onion pickled
1 c. cilantro leaves fresh chop
1 c. or 4 ozs. cotija cheese or queso fresco
crumbled
2 limes cut into wedges
Puree cilantro - oil - orange juice - garlic - jalapeño ñ lime juice in blender till smooth. Place marinade in large bowl with steak - marinate at least 1 hour at room temperature or refrigerate 3 hours.
Preheat grill medium high or cast iron skillet. Remove steak from marinade - grill. Cook - flipping once - about 3 minutes per side medium rare 135° F. or till desired level of doneness. Let steak rest 8 minutes - slice into thin strips.
Assemble tacos with tortillas - steak - salsa - pickled onion - cilantro ñ cheese. Serve with lime wedges for squeezing over.
Note~ sometimes I add the apple cider vinegar just for a more intense taste

Sounds very appetizing! I am just now collecting interesting recipes for the next season of outdoor recreation. The standard BBQ wings and sausages are already bored. I want new tastes. In addition, after quarantine, I really want to get together in a big noisy company and relax from the heart.
