This is one of my favorites for when I work long days.
1 nice beef roast
Lots of picante
Some rice
A crock pot
Throw roast and picante in crock, be sure to cover roast completely, set on low, go to work.
8-10-12 hours later throw rice in, it's done as soon as the rice is tender.
*WARNING* DO NOT hang around the house during the last couple hours, the smell will drive you crazy.
This makes a great meal in itself, but can be used for anything taco's, queso's, burrito's, nacho's, ect.
I also like to do BBQ country ribs this way, and seer them on the grill when done, talk about ribs that melt in your mouth.

Recipe sounds good! One of these days, I've gotta dig out the crock pot and give it a try with something besides queso...

I do a couple variations, Country ribs, bbq sauce and diced onion.. Spicy bbq wings, wings, bbq sauce, jalapinos. Wings only take 4-5 hours. Any of these are great when you don't have much prep time in the morning but want a nice slow cooked meal when you get home.
