Ribs ñ Sauce Makes it Again -along with a titbit

Ribs ñ Sauce Makes it Again -along with a titbit

2 racks of Ribs Pork baby back ribs
Remove membrane from ribs

Mix this rub together
2 tsp. Kosher salt
1 tsp. black pepper
1/3 c. brown sugar
2 tsp. lemon zest
6 garlic cloves minced
Rub all over ribs -30 minutes to an hour

Start the grill for indirect cooking heat to medium low –using soaked wood
chips of choice (I like mesquite or alderwood -place chips under the lit side of grill
placing a foil pan ½ filled with water on the grates over the chips.

Now with grate covered cook ribs side up over the UNLIT SIDE –turning often as needed
Till meat tender ñ pulls away from bone -5 to 6 hours.
Allowing to cook this long makes a better smoky flavor.. as U all know. Add chips as needed
with water.. once I just added some rum to the water was good. Can do this with thick pork chops too.
Of course not cooking as long..

Sauce~ Sauté
3 garlic cloves minced with
3 T. canola oil in pan till just golden.
Add
1 c. ketcup or use Heinz Chili sauce
¼ c. white vinegar or apple
¼ c. brown sugar or use Splenda to equal ¼ c.
2 T. paprika
1 T. chili powder or little more
1 tsp. cayenne pepper or UR liking
Touch of cumin powder (UR option
¼ c. water or beef broth

Simmer –stir maybe 15 minutes plus or minus

Brush sauce over ribs during the last 30 minutes of grilling.

Note~ Sometimes I add some light rum to sauce ñ cut down on water.. than
I have fresh lemon wedges sliced to serve with my ribs.

~~~On country ribs I've seasoned all sides with salt -pepper n garlic granular n let them sit about 30 minutes n placed on grill n grilled slowly n last 15 minutes sqeezed fresh lemon all over with light rum turning n re-adding the 2 ingredients till they were grilled to my lik'n n of course enjoyed every bite..
