Pulled pork stew Ideas?

I've got some pp leftover and I was just thinking about how to maybe turn into a good pot of stew. Anyone ever do this? Or you got any ideas?

Brunswick stew, or BBQ soup{http://chilicheesefries.net/barbeque-soup/}, Burgoo{http://www.burgoo.info/recipes/index.htm} Sub the PP for the mutton. Green chili Stew.
Never met a cow I didn't like with a little salt and pepper.

I did a pork stew a while back. I made it the same as a beef stew, only I used cubed pork loin for the meat. I would think PP would work about the same. Maybe add the PP a little later into the cook so that it doesn't break down too much from the longer cooking time of the rest of the stew.

I've done stew with left over brisket and pulled pork. Both ways, I did the same. Crock pot.... in layers... cubed up potatoes, sliced carrot rounds, small bag of pearl onions. You can go the easy way or homemade way, but make up about 4 cups of brown gravy (thin consistency). Pour over veggies, cover, let go on low for the day. About an hour before ready to serve, add meat. This keeps from over flavoring the stew with smoke, but still letting the meat season broth. It will also keep the meat from loosing it's chunk texture.

Dozen biscuits and that is some good stuff.

Know it is after the fact -but maybe next time

Place some sauce on bottom of a plate add a whole corn tortilla than add the left over pulled pork with some diced onions n peppers jalapeno's or choice of another corn tortilla on top of meat n more meat n end up with a corn tortilla STACKED Add sauce n heat it up in the micro

I make these stacks with homemade colorado red enchilada sauce n shredded beef with chopped roasted green chilies on the bottom corn tortilla n layer again with corn tortilla n meat only n top with corn n sauce n add shreddred cheese on top of that and make of course favorite cooked refried beans with bacon -onion -garlic n seasonings n serve. Can do these chicken n green chili sauce in stead of red sauce..

Another one is wrap meat in 1/2 floured THIN tortilla's n fold into mounds or squares n pour different sauce over top n with pulled pork could use the sauce from the pork.. with mashed taters.. Just another suggestion for U to plonder over.

Thanks yall. I ran out of pp before I could try anything different. I'll have another going soon. I just had a side of beef done, not much room in the freezer for pork right now.
