Costillas in a traditional BBQ style

Was a tad shocked to see a BBQ joint in the midwest somewhere featured on "Dine ins , drive thrus and dives" that served what we here in Texas would call costillas in a traditional BBQ style.

Think of a rack of ribs but the bandsaw is run thru the long portion (horizontally? If you will) in pinkie finger thick strips. In any Mexican meat market they are usually sold pre marinated in a Mexican flavored style but some sale them plain.

This place used a traditional rub and BBQ treatment we would all recognize. Cooking method is almost like thick bacon slices on a grill. You then cut the cooked meat between the bone and the end user is treated with a presentation they can grab with a thumb and forefinger , only touching the bone, and munch and dip like a chip! Good stuff!!

You of course have the option to go slow & smoke them if you have the patience.
I will sometimes grab a pound when engaged in other smoking activities.

we cook them bout twice a month on my cowboy cooker, get them already seasoned at Mi Pueblo's meat market..good eatin maynard!!!
