Taking my first shot at bacon

I have been reading and watching youtube and am giving it a shot. Im sort of basing what Im doing off of this video.

I went to the local butcher and purchased a 6 pound pork belly. I got the plastic cake pan at Wally world for $5.

I went to Lowes and got the rain gutter guard to space it off the bottom of the pan. It was $5 for two sections I only used one.

sorry about the multi page post onec I figure out how to put a bunch of photos in one post I will. This is what I used for the Maple. Its in the fridge starting its cure now Ill post an update next monday when it hits the smoke. :salut:

I think I would make a dry or wet cure using #1 or Morton's TQ.
Not to say that this don't work, but the cure will keep it safe and give you a better color.
I prefer skin off, to cure. Cure and flavor won't penetrate from the skin on side very well. Plus you get some pork rinds out of it.
I also cold smoke mine for 24 to 36 hours. Not a fan of hot smoke.
Let us know how it goes.
The last ones that I done were a dry cure for about 10 days, iirc.

Honey. I put it on about 12 hours before smoking while the pellicle was forming.

Peppered Bacon is my favorite. Maple and Honey will burn on you if you don't cook it slowly.

Just an update on try #1. It went in the trash with the rest of the stuff that was in the garage fridge when it went out.

We got the new fridge and come payday we restock. I'm making a trip over to Hirsch's meat market and but another belly. I'm going to have them cut it in thirds so I can try maple, honey, and pepper.
