Hi All I'm thinking of smoking a center cut Pork roast with the bone in..The roast is like 4 pork chops put together.What temp will it done at? What kind of time am I looking at?
I'm thinking 145*, or is that too high, cause it wiil still cook some after it is off.

145 will work. I would give it a nice sear then roast to 137-138 and tent for 10-15 minutes - the carryover will take it past 140.

Did mine 3 hours (?) total at cool end of the cooker, keeping it between 200-225, spraying once an hour, then glazed it one hour before finish. Best I recall it was like 145 internal at the end.
