My favorite way of fixing pork breakfast sausage has always been:
Fry a pan full or pork sausage patties as usual.
When the sausage is done add 2/3 cup of water to the pan with the sausage still in the pan.
Cover the pan, bring to boiling and simmer 2 or 3 minutes.
Remove sausage, split open a hot biscuit, and spoon the gravy over the biscuit.
This makes the sausage soft and moist and the biscuit/gravy is better than the sausage.
