Ok I got a leftover pigs head...

What would you guys do with it, it's leftover from the spit cook. My nan used to make a loaf called Braun, I know that's German for brown, but don't know anymore. My friend, who is a retired butcher told me to take it to him and he will make Braun.best I can describe is all meat is picked off bones, butcher said he will add shin bone meat and cook and set it in gelatine. Anyone tried it or heard of it.

you lost me at Gelatine - - - as for me, all the boned meat would go into homemade Tamales but we're talking about ingredients that may not be available in Kiwi Kountry - - - no matter what you do it has to be "you know what?" - - - Good Luck and keep us in the loop :tup: :salut:

Lol, I couldn't do that to my grandys, it was bad enough mister 4 when looking at the pig cooking .

Oup gelatine is made from hooves of horses etc i believe, we use it as a setting agent, it comes in granules just like sugar. I use it in setting my chicken croquettes, they are heaven deep fried.

Ok I picked up my share of the Braun my friend an ex butcher made for me. Our mutual friend also got a piece, she was looking forward to it. I just cut mine open , I will make a sammich later with a bit of tomatoe relish. I asked him what was in it, he said the pork head meat along with some shin beef. Spices he mentioned paprika cumin and a couple I can't think of ATM.
Looks and smells good.

reminds me of liver wurst kinda - - - - as I mentioned before - - - down in this Country those trimmings would be used in Tamales or Hawgs Head Chez :tup:

For me, the area of fair game on the pig ranges from rooter, to tooter. I'm not a big fan of organ meats; liver, brain, etc, but i've been known to go old school with hog heads; Hole in the ground with some coals and bury it. Excellent tacos to be had!!
