Glazed ham and other stuff

So tomorrow is nz trotting cup 20 mins from me. This is Canterbury ( my province) biggest day. I've raced horses on cup days in the past but I don't go over anymore because of the drunken crowds. So I put a do on at home for family and our closest friends, around 30 expected. I'm doing
Hot glazed ham at 5.30pm after the cup race, glaze is apricot sauce maple syrup bourbon and honey grain mustard. Also during the day I'm serving
Sausage rolls
Club sammys
Bacon n egg pie
Whitebait patties
Pate with platters
And chips n nuts etc.
Pics to follow of the ham, this ham done this way is unbelievable.

Lol, hams in garage until I cut rind off later. Caterers are doing a bit for me, I'm just making whitebait patties ATM.

Btw these small delicacies are caught in nets as they come from the sea to go upstream to,spawn. Can pay up to $100 kg.

Wow, an actual PICTURE :salut: :cheers: :laughing7: :D :lol: do those "Fishbait Patties" have a strong fishy taste or are they milder such as squid :?: is that a dough base they are sitting on ?

The ones I had had a mild flavor like calamari or scallops. Very nice

Speaking of Canterbury. When we where down there we spend a day at what we would call a County Fair being held there in Nov. it was a great time. Especially the sheep shearing contests. :D Good lord you Kiwis can shear a sheep in a hurry. :lol: :cheers:

Sounds like it might have been what we call A and P show, agricultural and pastoral show, that's on here all this week. This week is huge here. The whitebait taste like slight fishy flavour, cooked only with whole eggs and chopped mint. Nothing else. A real delicacy here, I cooked 1 kg of it which made about 50 fritters, they were demolished in about 5 minutes. Didn't get serving pics of ham as I was catching up with some friends I hadn't seen in a while, another friend carved the ham, it was very popular in a bun with mustard. Pre cook pic below
