Country style ribs

Going to try smoking about 1 1/2 lbs tomorrow, I have never smoked country ribs. :shock: I am guessing I will season as traditional St. Louis ribs, spritz at about and hour at 250 degrees, sauce wrap and another 45 minuets to 195 internal temp … does that sound right? I have no idea if I am going down the right track. Anyone with any tips, please jump in! Thanks!!

Thanks! I feel reassured. I have learned tons of things from Malcom, shoot I even use his AP seasoning and have a few t shirts with killer hogs all over them! I liked what I saw on his site, and you folks being on board … that's perfect!! Thanks for the reference, I will do it his way. :D

Deed done! Maybe I cooked about 30 minutes too long. They were crunchy as the sauce caramelised, but the were falling off the bone once you got past the pork candy crunch. Hopefully my pictures post ok. Well they posted sideways and in reverse order ... duh!

LOL Sooner. I played most of my life. Got it down to a legit 10 handicap at one time on a tough home course. I'd get ragged on when I'd go play away from home on an easy course and run a 75 off in them. Alas, those days are gone for me too

Thank you! They did have a little bark as you saw and the boss, (wife), simply said that they were awesome … happy wife happy life?? Anyway, Bogies are good! I have not played in three years, bad heart and arthritis among other things. After my ICD installation, ( woohoo, I have electronics running my heart), feels like I might be able to try again. Quick story … my wife plays golf, always tried to beat me, always got her by 5 or 6strokes! I was in the low 90's so you can see she's a decent golfer. Last time I played, after 8 holes she saw I was really struggling, (before the ICD). She suggested we finish at 9 and she'd buy me a burger and a beer at our favorite pub, I agreed. At the Pub she looked at the score card and said, "please sign it", I asked why and all she said was " just sign it for grins and giggles!" I signed, looked at the score and she beat me by 10 strokes!! That beer did not taste so good, there was some crow in it :D She never rubbed it in and loves my Q ... can't ask for more, can I?

Thanks for the input, will report after the inlaws try my country ribs this coming weekend!!
